Here’s a nice trick: Make the hard part of dinner ahead of time, and make it easy on yourself after work.
Bonus: These meatballs can be used for multiple meals! So a bit of prep work on Sunday evening means you have TWO quick dinners during the week!
The genius of these is that the seasoning is kept to a minimum so that they can be used in different types of cuisines! Put them over pasta, in a burrito, maybe even in quiche.
In a pinch, throw them in a crock pot and cover them in barbecue sauce!
Multi-Purpose Meat Balls
Generic Meatballs that can be used in multiple cuisines!
Ingredients
- 2 lbs ground beef
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs lightly beaten
- 1/2 small onion minced
- 1 clove garlic minced
- 1/3 cup fresh parsley chopped
- Kosher salt
- Fresh ground pepper
Instructions
- Preheat the oven to 450F. Line two baking sheets with foil.
- Combine all the ingredients into a large bowl, seasoning with salt and pepper. Mix well and roll into about 30 1-1/2in balls. Place all the meatballs on the baking sheets.
- Bake the meatballs for 12-15 minutes or until done.
Once the meatballs have cooled, store them in the fridge for use in other recipes.
